Element may not be burned out if it doesn’t ohm. Some elements have fused link on the insulators.

You are doing it wrong. Circuit opens when heated.

You didn't clarify if continuity is good or bad. You just said how to test it. Is it normally open or normally closed?

These heating and cooling systems are p ing me off seems every time I turn around something is wrong! Right now my heater is calling for heat the induction motor is working the valve opens for a second burner ignites and walla flame goes out!!!! You don't need a hub puller what I always did was take a 4" grinder with a wire wheel remove all the rust on the shaft sticking out. Then I tamp the fan little more in remove any rust right there. Tiny amount of WD 40 put the fan over a bucket and one tap on the blower motor shaft entire motor will slide right out of the hub. The problem is the rust that builds up on the shaft when you try to pass that rusted shaft though the hub it gets jammed.

Couldn't you have also ohmed out the solenoid?

If I remove the wires from the gas valve, should I test the voltage on the terminals of the gas valve or the wires themselves? Thank you.

Have a motor exactly like the one he’s using except not reversible. I did exactly as he did and swapped ends. It runs just fine but didn’t change direction at all still rotates exactly the same.
